Vinification: Grapes are picked by hand in small crates which are then placed in cold storage overnight. Grapes are then de-stemmed and put in the vinificator. Extraction lasts for approximately 5-6 days. Alcoholic fermentation is completed in stainless steel tanks, at a controlled temperature of 18-20 οC and lasts for approximately 15 days.
Cellaring: 3-4 months in french oak barrels second use.
Ageing potential: 1-2 years
Tasting Notes: Appealing red colour. Pleasant fruity character with a bouquet of red fruit with floral notes. Well balanced in the mouth with supple tannins and a fruity aftertaste.
Food Pairing: Makes a perfect match for white or red meat cooked in the oven, yellow cheese and sausages. Serve at: 16οC.
