Barrel Fermented Chardonnay 2019

Origin: Kokotos Estate vineyards in Stamata, Attiki at an altitude of 420 metres
Soil: Sand and clay, gently sloping
Grape Variety: Chardonnay
Microclimate: Sufficient winter rainfall, regular snowfalls and cool, dry summers
Harvest: Second half of August
Vinification: Grapes are picked by hand in small crates which are then placed in cold storage overnight, at 6οC. Grapes are then de-stemmed and gently pressed in a pneumatic press, followed by static debourbage. Alcoholic fermentation in French oak barrels, at a controlled temperature of 16-18 οC for approximately 18 days. Sur lie and batonnage treatment for 7 months in French oak barrels.
Ageing Potential: 3-5 years
Tasting Notes: Appealing light silver-yellow colour, with straw undertones. Fruity aroma, reminiscent of mango, pineapple and peach, with aromatic hints of nuts. Rich flavor with a clear fruity character, ideally expressed in an elegant buttery background with discreet presence of the barrel. Generous and well-balanced in the mouth, with refreshing acidity and fruity aftertaste.
Food Pairing: Enjoy with grilled white fish, poultry served with a light sauce and also with exotic salads, pasta with cream, mushroom risotto, vegetable dishes and pâté. Serve at 11-13οC.
