Vinification: Grapes are picked by hand in small crates which are then placed in cold storage overnight. Grapes are then de-stemmed and put in the vinificator. Extraction lasts for approximately 2 days. Alcoholic fermentation is completed in stainless steel tanks, at a controlled temperature of 20-24oC and lasts for approximately 158 days.
Cellaring: Three to six months in French oak barrels
Ageing potential: 2-3 years
Tasting Notes: Deep ruby colour with light purple cube and a pleasant aromatic profile with a strong character of black cherry, raspberry and notes of spices ( clove, cinnamon). On the palate, it appears balanced with smooth tannins and a fruity aftertaste.
Food Pairing: Makes a perfect match for red meat, stews with red sauces, strong cheese and charcuterie.Serve at 16-18°C.
