Origin: Kokotos Estate vineyards in Stamata, Attiki at an altitude of 450 metres
Soil: Sand and clay, gently sloping
Grape Variety: Cabernet Sauvignon
Microclimate: Sufficient winter rainfall, regular snowfalls and cool, dry summers
Harvest: First 10 days of September
Vinification: Grapes are picked by hand in small crates which are then placed in cold storage overnight. Grapes are then de-stemmed and put in the vinificator. Extraction lasts for approximately 6-8 days. Alcoholic fermentation is completed in stainless steel tanks, at a controlled temperature of 17-22 οC and lasts for approximately 18 days.
Cellaring: Three to six months in French oak barrels
Ageing potential: 2-3 years
Tasting Notes: Intense deep red colour with purple highlights. Dense nose with aromas of black fruit, whereas redcurrant and blueberry are dominant. Well balanced in the mouth, with elegant structure, supple tannins and a pleasant fruity astertaste. Makes a perfect match for simple, every day dishes, red meat, stews,strong cheese and charcuterie.
