Alcoholic fermentation is completed in stainless steel tanks, after first inoculation with Saccharomyces Cerevisiae yeasts, in approximately 18 days at a controlled temperature of 20-24οC.
Cellaring: 24 months in French oak barrels. The wine is then bottled without any further treatment and is further aged in bottle for at least 10 months.
Ageing Potential: 10-15 years
Tasting Notes: Elegant wine with a deep purple colour. Intense nose with good complexity and depth, aromas of ripe black fruits, plum, blackcurrant, blackberry and sour cherry. Notes of tobacco, spices and dark chocolate. Balanced in the mouth, with well-structured tannins and a long fruity astertaste.
Food Pairing: Serve with red meats, game and ripe yellow cheeses. Serve at 18-20οC
