Origin: Kokotos Estate vineyards in Stamata, Attiki at an altitude of 450 metres
Soil: Sand and clay, gently sloping
Grape Varieties: Merlot 70% – Cabernet Sauvignon 30%
Microclimate: Sufficient winter rainfall, regular snowfalls and cool, dry summers
Harvest: Early August for the Merlot and late August for the Cabernet Sauvignon.
Vinification: Grapes are picked by hand in small crates which are then placed in cold storage overnight, at 6οC. Grapes are then de-stemmed and put in the vinificator. Skin contact for the Merlot lasts for approximately 10 hours and for Cabernet Sauvignon, for approximately 6 hours. Alcoholic fermentation takes place in stainless steel tanks, at a controlled temperature of 16-18 οC for approximately 15-18 days. Sur lie treatment for 3 months.
Ageing Potential: 1-2 years
Tasting Notes: Delicate pink in colour. Intense aromas of jasmine, ripe pear and quince on the nose.
Elegant and refreshing on the palate, with a distinctive vegetal character and a long, fruity aftertaste.
Food Pairing: Serve as an aperitif or makes a perfect match with Greek vegetable dishes and pies, mushroom risotto and Asian tastes. Serve at 8-10οC.
